Our Story

It all began on the Reunion Island, where our paths crossed. Together, we cherished the dream of moving to France and take over a guesthouse where hospitality and sharing would be at the heart of our daily lives. The idea was simple: create a place where our guests feel at home, and where genuine and convivial moments naturally unfold.

In 2017, fate led us to an iconic location in Les Eyzies-de-Tayac: the historic institution of Le Centenaire. A former « Relais & Châteaux » property and a two-star Michelin restaurant for 28 years…  it was once again up for sale. We saw this as an opportunity to bring it back to life and write a new chapter in its story. This place represented more than just a business, it was a life project, a challenge to restore its prestige while infusing it with our own vision of hospitality.

Since then, each year has been an opportunity for us to grow and enhance the experience that we offer to our guests. In 2021, during the lockdown period, we undertook a major renovation of our rooms and bathrooms. Thanks to the expertise of our local artisans and partners, we successfully transformed the space while preserving the soul of the Hotel.

That same year, we launched La Terrasse des Beaux Jours, a summer bistro set in the heart of our garden. This warm and welcoming space offers shared dishes for simple yet delightful moments, such as charcuterie boards or fresh oysters. A true gathering place for food lovers who appreciate good cuisine and meaningful connections.

Our commitment to sustainable development has also driven us to implement concrete initiatives within our establishment. In November 2023, we had the honor of receiving the Trophée du Développement Durable – Dordogne Perigord, an award that means a lot to us.

In February 2024, we decided to expand our services: La Terrasse des Beaux Jours is now open year-round and has become the bistro Chez Chloé, welcoming guests from February to November, for lunch and dinner.

Chloé Métifet

I am originally from Réunion Island and have always been passionate about hospitality and gastronomy.

To gain experience, I had the opportunity to work in various 4- and 5-star hotels. I was also fortunate to travel to diverse destinations such as Australia, Scotland, China, South Africa, and Thailand, which enriched my worldview and allowed me to perfect my English.

In 2012, as I settled in Dordogne to pursue my studies in hospitality, I passed by Le Centenaire with my father and spontaneously exclaimed, without even knowing the history of the place: “One day, I will take over this hotel!” Years later, that dream has become a reality.

My commitment to sustainable development has led me to integrate eco-friendly practices into our hotel. I have successfully combined sustainability with high-end hospitality, creating a warm and eco-conscious guest experience. In February 2021, I took significant steps to improve our guest amenities: we eliminated all plastic bottles and replaced them with solid soaps and shampoos, handcrafted by local soap makers.

Passionate about wine, I pursued further training in oenology in both 2021 and 2023, obtaining Level 2 and Level 3 certifications from the Wine & Spirit Education Trust. Today, I travel across France in search of new vineyards and hidden gems to share with our guests. Each wine we select pays tribute to the winemakers and finds its true expression when paired with my husband’s cuisine. We take great pleasure in offering our guests a unique tasting experience, where every pairing highlights the very best of our products.

Mathieu Métifet

Born in Bergerac and raised in a family of farmers, I have always been in harmony with nature, growing up with an awareness of the challenges involved in cultivating high-quality products.

Later, I turned towards the sea and became an oyster farmer. An activity where the production process is crucial, and where success is constantly influenced by unpredictable weather conditions.

In 2015, I take off for Réunion Island with the desire to pursue a career in cooking. There, I discovered an exotic cuisine shaped by diverse influences from Madagascar, China, India and France. Uniting to create the distinctive and diverse flavors of Creole cuisine.

In 2016, I met Chloé and her family of chefs, who have been rooted in the culinary arts for three generations. It was alongside Chloé’s grandfather, Williams Doki-Thonon, that I truly learned that culinary creativity knows no limits. Since 2017, I have cherished every day spent in the kitchen, crafting new recipes and, above all, sharing my expertise and passion with my team.

In February 2020, I had the honor of joining the Maîtres Cuisiniers de France association, sponsored by Philippe Doki-Thonon from Réunion Island and Jean-Yves Homo from Nouvelle-Aquitaine.

For several years, I have been developing my own spice blends. Made from whole seeds, each blend is carefully selected, roasted, and combined before being ground. In December 2023, I decided to make them available for sell in our boutique.

Today, I have the privilege of serving as the chef of two restaurants: Chez Chloé, a bistro, and La Table du Centenaire, a fine gastronomic restaurant listed in the MICHELIN Guide France since 2021.
